Roasted Sweet Potato & Veggie Power Bowl

Health is the best gift you can give yourself. The type of food you choose to put in your body on a daily basis, can take you a long way. This power salad is so simple and quick to make, but most importantly it’s one of the best type of foods you can put in your body.

Sweet potato’s has become a regular to my meals. I mean they’re sweet, soft, loaded with vitamins, minerals, fiber, health-promoting phytonutrients, and etc,.
The roasted sweet potato prep is very simple. In a medium sized bowl, cut up a large sweet potato in equally sized slices. Add in minced garlic, garlic powder, salt, black pepper, olive oil, shredded Parmesan cheese, and red pepper flakes (optional). Mix the ingredients altogether.
On a medium sized baking sheet, spread a layer of cooking spray or olive oil. Set the sweet potato slices on sheet, and place in a preheated oven at 400 degrees for 15-20 minutes.
If you like to dip your fries/wedges in sauces like i do; what goes really well with the sweet potato wedges is a classic ranch mixed in with a bit of sriracha. It gives it a nice creamy sauce with a spicy after taste.
I like to add variety of vegetables along with my sweet potato. My go to, is roasted broccoli, seasoned baby tomatoes, and avocado.

INGREDIENTS

  • 1 large sweet potato
  • A pinch of salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp minced garlic
  • ½ tsp red pepper flakes (optional)
  • 1-2 tbsp olive oil
  • ¼ cup of Parmesan cheese

INSTRUCTIONS

  4. Let cool for a few minutes before serving.
