Roasted Sweet Potato & Veggie Power Bowl
Health is the best gift you can give yourself. The type of food you choose to put in your body on a daily basis, can take you a long way. This power salad is so simple and quick to make, but most importantly it’s one of the best type of foods you can put in your body.
INGREDIENTS
- 1 large sweet potato
- A pinch of salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp minced garlic
- ½ tsp red pepper flakes (optional)
- 1-2 tbsp olive oil
- ¼ cup of Parmesan cheese
INSTRUCTIONS
- In a medium sized bowl, cut up a large sweet potato in equally sized slices.
- Add in minced garlic, garlic powder, salt, black pepper, olive oil, shredded Parmesan cheese, and red pepper flakes (optional). Mix the ingredients altogether.
- On a medium sized baking sheet, spread a layer of cooking spray or olive oil. Set the sweet potato slices on sheet, and place in a preheated oven at 400 degrees for 15-20 minutes or until cooked.
- Let cool for a few minutes before serving.
